Pinterest is a hungry girl's best friend. When my husband and I are prepping to go grocery shopping we always do a few searches to get inspired. It's the easiest way to whip up something new for dinner and stay on task (and on budget!) while at the store.
Has anyone actually ever stayed "on task" at the grocery store? Have you ever made it out of there in under 30 minutes? If you have figured out how, please let me know.
So headed out on our last trip, I found an easy chicken Crock-Pot recipe called Mississippi Crack Chicken. It was a WINNER.
Here's your grocery list:
4 chicken breasts
8 oz cream cheese
1/2 stick butter
2 ranch seasoning packets
1 au jus dry mix packet
Honestly, throw it all in. That's it.
Simply mix cream cheese, dry seasonings and butter together. Put chicken
in Crock-Pot (tip: use a pot liner for easy clean up) and spoon mixture over the top.
Cook on high for 4 hours.
When it's done, mix and shred chicken (tip: use mixer to do both in seconds).
It may not look great - but taste before you judge.
It made more than enough to fill 5 small containers, perfect for 5 sammiches!
Taking this to work, popping it in the microwave, and slapping it on a couple slices of bread (cheese optional) was such an easy lunch - and the good news - you get to eat it 4 more times!
YUM!
Several versions of this recipe can be found online,
but thanks to Fox Valley Foodie who is credited with for the dish on multiple sites.
